3. Cauliflower. Oh my gosh, how I love cauliflower (and eat an embarrassing amount of it every day). Meridan calls it "poised to be this year's kale." Some restaurants slice it thick and serve it like a steak. It can also be pureed and baked into a cake. I like it tossed with a little olive oil and roasted, or just raw.
